Spicy Summer Melon Salsa 1 cup each, diced, cantaloupe, honeydew and seeded watermelon 1/2 cup diced, red bell pepper 3 tbs lime juice 1/4 cup diced onion 3 tbsps chopped cilantro 1or 2 large jalapenos, depending on the spiciness desired 1/2 tsp salt Combine all the salsa ingredients together. Let stand for a few minutes for flavors to blend. Can be served immediately or refrigerated for later use. Serve with chips or as a side dish.
