Spicy Potatoes with Peanut Coating 4 or 5 potatoes, peeled and diced 1 Tb canola oil 4 Jalapeños, chopped fine, w/seeds 1 Habanero pepper, chopped fine, w/seeds (more for better heat) 1 medium onion, sweet type 1 tsp turmeric 2 Tb peanut butter, or to taste 1/4 tsp. cumin 1/4 tsp. asafoetida (optional) I used it but a crushed garlic clove will work Salt to taste Sauté peppers and onion lightly in oil. Add potatoes and cook till light brown, then add spices and sauté another minute or two to mellow spices and develop aroma. Mix in peanut butter, heat well and serve. Great by itself, even better with chicken-fried tempeh or vegetarian chicken patties. Now the asafoetida is available in middle eastern stores. But i love the idea of adding peanut butter to coat potatoes... it sounds so yummy. i am just gonna have to tone it down a few notches in the spice-factor for me. *lol* i know susie and Shawn would be able to eat it as is!
