Split Pea Hummus

1 c Dried green split peas

1/2 c Tahini

1 T Olive oil

1/3 c Lemon juice

2 Garlic cloves; minced

1 1/2 t Dried mint

4 T water

 

 

 

Cook the split peas in 3 cups of water for 45 to 60 minutes on the stovetop or 8

to 12 minutes in a pressure cooker.

Place all ingredients in a food processor and blend until smooth and creamy

adding enough water to achieve desired consistency.

 

Yields: 2 1/2 cups. Serve at room temperature.
