Happy St Pat's Day Hungarian Paprika Potatoes

Do you know I brought these for potluck along with the sauteed cabbage and

people are begging for breakfast samples.

Wishing everyone a blessed 4 leaf clover day.

 

 

Hungarian Paprika Potatoes

 

1-1/2 tablespoons butter or margarine

3/4 cup chopped onion

3/4 cup chopped green bell pepper

1 clove garlic, minced

4 to 5 medium potatoes, peeled and diced

1/2 cup chopped stewed tomatoes (drained)

3/4 teaspoon sweet paprika

Salt and Pepper to taste

 

 

Melt the butter or margarine in a heavy sauce pan. Add the onion and saute for

3 minutes.

Add the bell pepper and garlic and cook, stirring occasionally, until the onion

is tender. Add the potatoes and stir. Cook, covered, shaking the pan

occasionally, for 25 minutes, or until tender.

Add the tomato, paprika, salt, and pepper and stir gently. Cook, uncovered, for

another 5 minutes on low. Serve hot or they warm

well the next day.
