One of my friends made some of these for me last week and I managed to prize the recipe out of her before she disappeared off for a long weekend in Florence in Italy. I just took them out of the oven and I cannot wait until they are cool enough to eat. The thing I really like about the recipe, apart from the fact that it is really easy, is that the possibilities for variations seem to be positively endless. Christie Date and Banana Oat Cookies 75 g (3 oz) dates, chopped 75 g (3 oz) walnuts, chopped 3 medium bananas, mashed 175 g (6 oz) rolled oats 100mls sunflower oil 1 tsp vanilla essence Preheat oven to Gas Mark 6/400 F/200 C. Mix ingredients well together. Drop tablespoonfuls of the mixture onto an oiled baking tray. Bake for 20 minutes.
