Guest guest Posted March 16, 2006 Report Share Posted March 16, 2006 Sun-Dried Tomato Hummus 2 cloves garlic, minced 1 1/2 cups cooked or canned garbanzo beans 1/3 cup hot water 3 tablespoons tahini 2 teaspoons lemon juice 4 sun-dried tomato halves, finely chopped 1 tablespoon minced cilantro Cover dried tomatoes with boiling water until softened. Combine garlic, garbanzos, water, tahini, and lemon juice in a food processor. Process until smooth. Add tomatoes and cilantro and pulse to combine.
