Black-eyed Pea Salad

Dressing:

1/2 cup cider vinegar

1/2 cup sugar

1/2 cup vegetable oil

 

Dissolve sugar completely in vinegar before adding oil. Shake well before

pouring over salad.

 

 

Salad:

1 can black-eyed peas, rinsed and drained

1/2 c red onion, chopped

1/2 c green pepper, diced

1/2 c red pepper, diced

 

Combine all ingredients and toss with dressing. Allow to sit for at least an

hour for the flavors to bloom.
