Gary's Midnight Salad dressing

This is from a book called 'Potluck at Midnight Farm'. There are quite a few

vegetarian recipes in there, but I haven't had time to try them yet. This

dressing is good, the green goodness recipe made me think of it.

 

1 sheet nori

1 cup olive oil

1/2 cup dry white wine

1 cup balsamic vinegar

2 Tbsp tamari

2 Tbsp Dijon mustard

4 garlic cloves

1/4 cup apple cider

1 juiced lemon (I often use the bottled stuff)

1 Tbsp grated lemon zest

pinch of cayenne

1/4 Tbsp fresh ground black pepper

 

Toast nori by holding the sheet with tongs over a medium flame and moving

back and forth until it crisps and turns slightly green

Combine all ingredients in a blender. Liquify for about 3 minutes. The book

says it will keep for 3 days covered in the refrigerator, but it lasts longer

than that.
