Guest guest Posted March 15, 2006 Report Share Posted March 15, 2006 I make this for our family. It makes about 2 quarts, which I store in 2 quart bottles. Every year we have a workshop and we are always asked to make the salad. We have tried to change the dish we make but they won't accept our request. It has much less oil than regular salad dressings plus lots of fiber. The flax seeds make it thick. Green Goodness Salad Dressing 2 cups olive oil 1/2 cup balsamic vinegar 1/2 cup prepared yellow mustard 3 stalks celery 5 pepperoncini 1 bunch cilantro (about 1-1 1/2 cups pressed into measuring cup)(I just use largest bunch I can get) 10 cloves garlic 3/4 cup ground flax seeds 2 Tbsp. mixed Italian herbs 2 tsp. lecithin About 3-4 cups water Put this all in a blender. We have a Vita Mix, which blends very well. A regular blender will probably not work as well. Mix this up until it is one consistency. It may be better not to put all the water in until the end.
