Guest guest Posted March 15, 2006 Report Share Posted March 15, 2006 2 cups shredded low fat montery jack cheese 1 cup salsa 1/4 cup chopped cilantro 1/2 tsp chili powder 1 can drained black beans 1 cup green onions, chopped Make basic polenta (recipe below), stir in 1 cup cheese and green onions. Mix remaining ingredients. Spray 13x9 baking pan. Layer polenta, 1 layer bean mix, 1 layer polenta. (I just put the bean mix on the bottom and top with all the polenta). Bake 35 minutes at 350. Basic polenta 1 1/4 C cornmeal 4 C milk or water Gradually add liquid to cornmeal, bring to boil, stirring constantly. Reduce heat and cook 15 minutes.
