Malligatawny Soup (Indian) 1/2 cup dal or dried yellow split peas (rinsed) 2 Tbls. canola or olive oil 2 medium onions, chopped 3 garlic cloves, minced slice of fresh ginger, grated 1 carrot, peeled and finely chopped 2 ripe tomatoes, chopped 5 cups water 1/4 tsp. turmeric 2 tsps. curry powder 1/4 tsp. black pepper 1/2 cup coconut milk 2 Tbls. chopped cilantro salt to taste Heat oil in soup pot and add onion, garlic, ginger, turmeric and carrot and saute for 3 minutes. Add dal (or split peas), water, tomato, curry powder, and pepper. Simmer over medium heat for 1/2 hour or until peas are soft. Cool soup down. Place in batches in the blender, or use a hand held blender or food processor and puree soup. Place soup back in pan and add coconut milk, salt to taste and add cilantro.
