Thanks Gary,

 

I think that is a very good discription of ajwan seed. I have one major

discrepancy. All the ones I've ever seen look more like celery seeds to me.

Maybe there are different types.

I don't think you have ot have the ajwan. It does have a nice zing and a nice

flavor though. Sometimes I've even left out the cumin and coriander and ajwan

and just used Italian herbs.

I think ajwan or ajwain seeds are also called

carom seeds which might be more available.

Sounds like they are closer to cumin than

oregano though. However I'm not really

familiar with ajwan so I'm just basing that

statement on what I read below. Hope this helps.
