Guest guest Posted March 13, 2006 Report Share Posted March 13, 2006 Veggie Cornmeal Pizza 2 1/3 cups water 1 cup yellow cornmeal 1 tbsp. butter 1/4 tsp. salt 1/8 tsp. cayenne pepper 2 tbsps. olive oil 1 clove garlic, finely chopped 1 tsp. dried basil leaves 1 lb. broccoli, red peppers, onions & mushrooms (cut into small pieces) 2 cups mozzarella cheese, shredded In medium saucepan, heat water to boiling. Stir in cornmeal, butter, salt and cayenne. Whisk until mixture is smooth and thickens. Spoon onto greased 12 inch pizza pan, spread evenly. Bake in preheated 425 degree oven for 5 to 7 minutes or until set and light brown. In small bowl, mix oil, garlic and basil. Sprinkle vegetables over partially baked pizza crust. Sprinkle with cheese. Drizzle with oil mixture. Bake 15 to 20 minutes or until cheese is melted and vegetables are hot. Makes 2 servings. I make something similar whereby I add cornmeal to the dough, but this sounds even easier, just pouring a simple cornmeal mix right into the pizza pan.
