Guest guest Posted March 13, 2006 Report Share Posted March 13, 2006 Citrus Almond Fruit Compote 1/2 teaspoon almond extract 1 teaspoon grated orange zest 1 tablespoon honey 1/2 cup orange juice 1 orange, peeled, cut into 1/2 inch slices and then quartered 2 cups melon 1 inch pieces (cantaloupe and/ or honeydew) 1 cup strawberries 2 tablespoons slivered almonds, toasted In a small bowl, mix together almond extract, orange zest and honey. Add in orange juice and mix well. In a medium bowl, toss fruit with orange juice mixture. Refrigerate the compote, covered, until ready to serve. Garnish with slivered almonds immediately before serving. Makes 4 servings. Calories: 98, Protein: 2 g, Fat: 3 g, Saturated Fat: less than 1 g, Cholesterol: 0 mg, Carbohydrate: 19 g, Dietary Fibre: 3 g, Sodium: 9 mg. Points 2.
