Marinated Spicy Green Olives

 

1 jar green olives, drained, reserve brine and save empty jar and lid

Lots of peeled, sliced fresh garlic, to taste

Dried, crushed red pepper flakes, to taste

Dried oregano, crushed

Olive oil

Reserved liquid brine from olives

 

Layer olives in reserved jar.

 

Sprinkle several slices of garlic, crushed red pepper and crumbled oregano

on the olives in the jar.

 

Continue layering until all olives have been used. Do not stuff tightly.

 

Fill jar about 3/4 full with reserved brine.

 

Top off with olive oil, replace lid and tighten securely.

 

Shake jar several times to thoroughly mix all the ingredients.

 

Refrigerate for a few days to permit flavors to develop.
