Guest guest
Here's another version of mock tuna salad using beans. I love this one also. Great Northern Mock Tuna Salad 1 1 lb. can Great Northern Beans, rinsed and drained 2 tblspns. onion, finely chopped (I use a little more) 2 tblspns. sweet or dill pickle relish 1/3 cup finely chopped celery 1 1/2 tblpsns. mayo of you choice (I use Veganaise) Dash garlic powder salt & pepper to taste Optional - dash kelp powder (I use it, adds the sea taste) Place beans in bowl and mash with a fork. Add remaining ingredients and mix well. Chill to blend flavors and serve. I really enjoy this on whole wheat bread.
