Mojo Criollo Sauce (garlic sauce)

I was first introduced to this wonderful sauce in

Yucatan. It's orginally a part of Cuban cooking.

This goes over rice, potatoes and it will go good over

Jim's Yucca Pancakes too. I make malanga pancakes and

place this over the top.

 

Mojo Criollo Sauce (garlic sauce)

 

8 cloves of garlic

1 onion, cut in 1/2 and then thin slices

1/4 cup fresh squeezed orange juice

juice of 2 limes

juice of 1 lemon

dash of salt

(optinal but not traditional to add a minced hot

pepper)

 

With mortar and pestle mash garlic and a dash of salt

until you get a thick paste to form, then place in

small bowl with onion and juices. Let sit and

marinate for about half hour.

Just before you are ready to eat take a skillet and

heat a little oil unitl it's hot, place sauce into

skillet all at once but be careful it doesn't splash

out, stir to saute for a few minutes. Spoon over your

side dish.
