I have an old cast iron pan I like and I do make the pan and oil hot first but I didn't know about not putting everything in at one time, thank you for telling me. I will be sure to ask if I don't think I'm doing it right though. I got a hot oil blister one time and then one other time I grabbed the iron pan handle and it really hurt so I try to be careful now.
