Mashed Potato Pie 2 lbs. potatoes, peeled and cut into quarters 6 slices of vegetarian lunchmeat, chopped 1/2 cup grated parmesan cheese 2 tbls. butter or margarine 1 1/2 cups shredded mozzarella Dash of breadcrumbs 2 tbls. dried oregano olive oil Preheat oven to 350 degrees. Cover potatoes with salted water and boil until tender 15 - 20 mins. Mash and add parmesan and 1/2 of the veg. lunchmeat. Butter and flour a 9-inch pie plate. Spread a later of potato mixture on bottom Add remaining veg. lunchmeat and sprinkle mozzarella on top, add a second layer of potato mixture. Cover with a dash of breadcrumbs and sprinkle oregano over top. Drizzle a little olive oil over top and a few dots of butter or margarine. Bake for 35 - 40 minutes.
