Spinach and Italian Sausage Rigatoni 1 box (16 oz) rigatoni 2 links Tofurkey Italian sausage chopped up 2 onions, chopped 1 sweet red or green pepper, chopped 4 cloves garlic, chopped 1 can crushed tomatoes, in puree 1 cup water 1 box (10 oz) frozen spinach, defrosted, drained 1/2 tsp salt 1/2 tsp. Italian seasoning 1/4 tsp red pepper flakes Fresh grated parmesan if needed Cook pasta according to package directions. Drain; set aside. Cook Tofurkey sausage in saucepan,for about 3 minutes. Add onion, green pepper, and garlic; cook 8 minutes. Add tomato, water, spinach, salt,Italian seasoning, and pepper flakes; cook with lid cocked, 15 minutes or until heated through.
