Vegetarian/Vegan Potato Carrot Patties and Gravy 2 large potatoes-cubed 2 large carrots-cubed 1 medium onion-diced 1 cube vegetable bouillon(I used Organic Gourmet) 1/2 teaspoon basil or your favorite herbs salt and pepper to taste 1/2 cup uncooked oatmeal(reserve for later to add as a binder before forming the patties) You will also need apx. 1/2 cup of corn meal to dip patties in before baking or frying. Disolve the vegetable bouillon cube in apx. 3 cups water, add veggies and herbs and simmer until veggies are soft. Drain, mash and slightly cool. Add oatmeal and let stand apx. 15 min. until oatmeal softens. Form into patties and dip both sides of patties into corn meal. Bake in 350 degree oven, turning once until patties are browned on both sides. I also skillet browned one pattie in a scant amt. of olive oil. I prefered this patty over the baked This recipe makes apx. 4 large patties. With reserved veggie-bouillon broth add 1 tablespoon corn starch and simmer until thickened.
