Isis Garlic Mashed Potatoes with Goat Cheese and Olives 1 1/2 lbs potatoes, peeled and quartered 1 tsp. dried thyme 4 cloves of garlic, cut into 3rds. 1/4 cup half and half 4 oz. goat cheese, crumbled 1/3 cup black olives, chopped 2 tbls. olive oil salt and pepper Chives for garnish Boil potatoes with thyme for 10 minutes, then add garlic and boil for another 5 to 10 minutes until tender. Reserve 1/3 cup of the potato water and drain potatoes (but try to not discard the garlic). Mash the potatoes and garlic until smooth and lump free. Stir in the cream, goat cheese, olives, olive oil, salt and pepper. If texture is slightly stiff then stir in a small amount of the reserved potato water. Serve with chives over top.
