Southwestern Bean Salad 1 can kidney beans, rinsed and drained 1 can black beans, rinsed and drained 1 can garbanzo beans, rinsed and drained 2 celery ribs, sliced 1 medium red onion, diced 1 medium tomato, diced 1 cup frozen corn, thawed 1/4 cup sliced black olives 1/4 cup chopped cilantro DRESSING: 3/4 cup thick and chunky salsa 1/3 cup vegetable oil 1/4 cup lime juice 1 1/2 teaspoon chili powder 1/2 teaspoon salt 1/2 teaspoon ground cumin In a bowl combine beans, celery, onion, tomato, olives,cilantro and corn. In a medium bowl. Combine salsa, oil, lime juice, chili powder, salt and cumin; mix well. Pour over bean mixture and toss to coat. I ate this for dinner with crushed tortilla chips on top.
