Guest guest
I made Donna's Peaceloaf last night. A few changes though, as I neverhave ketchup in house, or BBQ sauce. I added 2 squirts of chipotle Tabasco, about a 1/2 tsp of liquid smoke... and probably 1/3 cup of rolled oats because it seemed very soft (not sure how it would have been with the added sauce). I baked it, and it seemed to take a long time to brown - do you use a glass loaf pan or a metal one? I used a glass one. Anyway, it stayed in about 50 minutes. It was firm enough to slice, but slightly crumbly (perhaps overbaked some!). Definitely not dry though, and *excellent* taste. I can't believe I've never liked lentil loaf, now. I'll be making this more often, once Donna tells me what the raw texture is supposed to be like!! I went back for seconds and I never do that. My husband ate 2/3 of the loaf himself, so if I was actually going to try to have some for more than one lunch, I'd have to make several loaves... So, Donna, to abbreviate: What texture should I aim for in the mixture, before I put it into which type of loaf pan? :-)
