Guest guest Posted March 6, 2006 Report Share Posted March 6, 2006 Every vegan meatloaf type recipe I have tried comes out soft and mushy, so that it is better scooped out with a spoon. I would really love a recipe that is firm enough when cooked that it can be sliced with a knife and be slightly chewy. Does one exist? You cook up and cool a bunch of lentils and the place them in a bowl and mash. Proceed like you would with any other meatloaf. I normally use oats or breadcrumbs, ketchup, onions, sliced cooked carrots, whatever else I have on hand.
