Nope, I didn't put poison in his.........LOL (:- ) I mixed radish leaves with the spinach, that's the only alteration I made. Thanks PT and you share the news with PT Junior Cooker. Donna My daughter is doing a cooking class in school called Cultural Cooking, and she wanted to try one of the recipe she made in class out on us. i have to tell you all, this recipe is so delicious! You have got to try it. She served it to us last night and it was a huge hit. She did add the feta to the tomato-spinach saute for about a minute to make it all melty before she tossed it with the pasta.... oh my mmmmmmmm. She asked me if we were just eating two bowls to be " nice " . *lol* Silly girl! Penne Pasta with Spring Greens and Feta Cheese 1/4 cup sunflower seeds 3 cloves garlic, minced 2 tomatoes, chopped 1/4 cup olive oil 1 tsp. dried rosemary 1 tsp. dried basil 1 tsp. sea salt ~ or to taste 1/2 bunch spinach, washed and chopped 1 pound penne pasta 1 cup feta cheese, crumbled Saute seeds and garlic in the olive oil for 2 minutes. Add herbs and spices, and stir. Add spinach and tomatoes, cooking until the greens wilt down a bit, about 2 minutes. Serve over penne pasta, cooked al dente. Crumble feta cheese over top before serving.
