Guest guest Posted March 5, 2006 Report Share Posted March 5, 2006 " John Barley-Corn Casserole " 3 garlic cloves minced 1 cup chopped onions 2/3 cup thinly sliced carrots 1 Tblspn. canola oil 3 cups vegetable broth 1 cup barley 1/4 tsp. sage 1/4 tsp. salt 1/8 tsp. pepper dash red pepper flakes 2 cups frozen corn thawed 1/2 cup chopped fresh parsley or cilantro (I prefer cilantro myself) Preheat over to 350 degrees In a skillet over medium heat saute garlic, onion and carrots in oil until crisp tender. Transfer to a greased baking dish (2 quart size), add broth, barley, sage, salt, pepper and dash of red pepper flakes, mix well. Cover and bake at 350 degrees for one hour.
