The only thing I can think of is borscht, which I'm not terribly fond of. Anyone got any favourite recipes to share? I'm wondering about something with couscous, rice or some such. Guest guest Posted March 2, 2006 Report Share Posted March 2, 2006 Roast them and toss them with chopped bell peppers, top with a jalapeno-citrus-cumin dressing (unfortunately I can't the exact recipe at the moment). Another salad I love, if you're not vegan: Roast or boil 6 beets, until beets are tender, & peel. Slice into 1/2 " rounds. Toss in marinade: 1/4 tsp each: salt, black pepper, dried thyme, paprika, dried basil 1/8 tsp each: dried oregano, onion powder, garlic powder pinch cayenne 3/4 c vegetable oil (this is the orginal recipe amt., but I tend towards much, much less - just enough to coat the veggies) Toast 1 1/4 c walnuts. Grill the beets 2 minutes on each side. Toss in a vinaigrette (below). Arrange on a plate, topped with the toasted walnuts, & a few dollops of soft goat cheese. Sprinkle with chives.
