Guest guest Posted March 1, 2006 Report Share Posted March 1, 2006 Artichoke and Garlic Hummus 1 (15 ounce) can garbanzo beans, rinsed & drain 1 cup Artichoke hearts, drained (save juice) 6 Cloves garlic 2 Lemons, juiced 1/2 tsp Paprika 1/2 tsp Cumin 1/2 tsp salt 1/2 tsp White pepper Combine all ingredients but the artichoke oil in the bowl of a food processor, turn on, and slowly drizzle in artichoke oil as the ingredients are being processed to a creamy consistency. One question: you are using the artichoke hearts that are marinated in the oil and vinegar, right? i have some of those in my pantry, and also the kind that come in cans packed in more of a salty brine.
