This would have served 4 of us if I hadn't eaten it all (I'm pregnant, cut me some slack, LOL) If you don't have rice noodles ramen noodles or even an angel hair pasta will work as well. I usually add onions to the garlic and I toss some frozen peas (unthawed) in with the peanut butter, but yesterday I didnt have either of those around. Pour boiling water over rice vermicelli and allow to sit for 15-20 minutes, until soft Meanwhile, sautee 4 cloves of garlic (minced) in a small saucepan. Add some crushed red pepper flakes and sautee another minute or so. Add 1/2 cup water and 1 cup crunchy PB (smooth will work too). Mix well over low heat until PB is mostly melted, add more water to the consistency you like. Add 20 drops hot sauce of choice (I used sriracha, the " rooster " sauce you see in Vietnamese restaurants) add a dash of tamari or soy sauce if you want. Mix well.
