Take a package of rice stick noodles and drop in boiling water,let boil for 3 minutes, drain and let them sit while you chop your veggies for a stir fry. Take the cooking scissors and cut the noodles several times. I just cut and toss, no need to measure the length or anything like that. These noodles are very easy to work with since they don't become pasty like pasta, they keep their shape a slight firmness. Now toss them right into the pan while you stir fry, they will finish cooking as you toss in the wok. They also absorb the flavors of your sauce and vegetables.
