Chinese stir fries

Does anyone have any good recipes for Chinese stir fries? I just got a new flat

bottomed cast iron wok and am trying out recipes. I can't seem to get the

flavoring as good as that in restaurants. It seems like most recipes are pretty

generic as far as flavoring. They just use rice vinegar, soy sauce and change

the veggie assortment. Does anyone know when to use Chinese 5 spice? How to

make homemade bean paste? How to make chow mein noodles. I saw recipe a recipe

for chow mein noodles on the net. I t just said to make spaghetti (from 2 "

pieces) and then put it in the oven. It tasted terrible.

A very good friend of mine was a Chinese chef. He used tons of fresh garlic in

nearly everything, plus soy sauce, sherry, rice wine, and fresh (or dried)

cayenne peppers. First he'd sauté the garlic in a little peanut oil, then add

the vegetables and a mixture of soy sauce, cayenne pepper (chopped whole

peppers) and rice wine, and sauté some more. Then he'd add bean paste, and a

sauce made from sherry, corn starch, and soy sauce.

For Thai dishes he'd use hot bean paste and add a little hot sesame oil to the

peanut oil. For Mandarin dishes, he'd sometimes use a little plum wine in the

sauce. I stir-fry everything using this method. I haven't come across a

vegetable that tastes bad in this sort of stir-fry.

Most Chinese noodles are made with rice flour, so unless your spaghetti was made

this way, this could account for the difference in texture and disappointing

taste.
