I finally found just the right recipe. In our area we grow wonderful mellons and I was always reminded that the inner rind goes to waste, and knew an aunt once pickled it. If anyone has any hints for making this particular recipe please let me know. Sure wish I had some green pepper jelly for St.Patty's Day. Darn !
