Guest guest Posted February 28, 2006 Report Share Posted February 28, 2006 I made this with my over supply of tomatoes a neighbor gave me. Came out very tasty over my spiral pasta. Fresh Tomato and Sage Sauce 2 tablespoons olive oil 1 cup Spanish onion, minced 3 garlic cloves, minced 1/4 teaspoon red chili pepper flakes 4 cups chopped plum tomatoes, juice reserved 1/2 teaspoon salt 1 cup water 1 tablespoon sage, finely chopped Heat oil in a sauté pan over medium heat. Add onion and garlic. Cook until golden-brown, about 4 minutes. Remove pan from heat; stir in chili flakes. Add tomatoes, reserved juice, salt, and water. Bring to a simmer over medium heat. Cook, stirring occasionally to gently crush tomatoes, for 15 minutes. Stir in sage. Serve immediately, or properly store until needed. Makes about 4 servings Mail Bring photos to life!
