I tried one of your pates yesterday but now I can't remember which one. I have it printed somewhere. It was grand. I printed a stack of your recipes and will try another soon. Do you know what a fatoosh (not sure I spelled this correctly). I don't have a recipe for it and I remember years ago someone I worked with shared some of their sandwich salad lunch with me. Its a middle eastern green salad which uses day-old or toasted pieces of pita bread crumbled into the salad reminiscent of croutons. The salad dressing is a very simple lemon juice/olive oil vinaigrette flavored with a touch of allspice and sumak. The sumak gives it a nice sour bite. If you google " fattoush recipe " , you'll find many recipes. Go for one of the Lebanese ones, and stay away from ones that use vinegar - authentic recipes use lemon juice and no vinegar.
