Guest guest Posted February 27, 2006 Report Share Posted February 27, 2006 Cauliflower with Caper Vinaigrette 1 head of cauliflower 1/4 cup of capers, drained (save juice) Dressing ---------- 1/4 cup veg. stock 2 tbls. olive oil 1 tbl. caper juice from jar 1 tbl. white wine vinegar 2 tbls. fresh basil, chopped 2 tbls. fresh Italian parsley, chopped 2 tbls. chives, chopped (or green onion tops) 1 large garlic clove, minced Pinch of crushed red peppers flakes Black pepper to taste Cut cauliflower into florets and steam for 5 minutes. Crush the capers with a pestle and mortar or back of spoon and set aside. Place cauliflower in bowl and toss with crushed capers, pour dressing over cauliflower and crushed capers and toss.
