Capers

With all the talk about capers on this group I have been looking into

buying some. However when I went in search of them, I found myself

presented with a bewildering choice. Some were packed in salt, but

with instructions in Italian so I wasn't quite sure how to deal with

them, others were in sherry vinegar or in brine. Which should I get?

How do you deal with them? In any case do you rinse them off before

using them? There were also caper berries which were much larger - I

guess it was the buds that you have all been talking about?

Christie,

I know what you mean about " bewildering choices " but when it comes down

to it I always try to choose organic. I bought *Mediterranean Organic "

wild capers and they are so good. I normally try to buy American

products but this brand was the only organic at my local super market.

This one is from Turkey but *certified organic*. They are not so salty

that they need to be rinsed and are quite tasty.

I really like them in salad.
