Guest guest Posted February 26, 2006 Report Share Posted February 26, 2006 Curried Tofu a la Doug 2 large ripe tomatoes, peeled seeded and chunked 1 block of firm tofu, pressed and drained 1 medium size yellow onion, chopped medium 2 cloves garlic, good size, peeled minced 1 1 " knob of ginger, peeled and chopped 1/2 green pepper chopped 1/2 cup coconut milk 1 tbls madras curry powder 1 tsp garam masala Simmer the onion, garlic and ginger in a little olive oil until onion becomes limp. Sprinkle with the curry powder, add the tomato chunks and chopped green pepper and the coconut milk. Cut the tofu into 1 " pieces and carefully fold into the tomato mixture.
