Frankly Fake Feta Cheese 1 pound extra-firm tofu 1 cup -- water 1/2 cup light miso 2 tablespoons lemon juice or white wine vinegar 1 teaspoon -- salt Cut the tofu into slices or cubes. Combine the remaining ingredients to make a marinade, and pour over the tofu. Keep this refrigerated in a covered jar for up to three weeks, shaking the jar every day. Use in salads. Try this " feta " in salads and sandwiches, or just to nibble on by itself. You can also use low-fat tofu in this recipe and still get delicious results.
