I like this recipe - from the old Veglist e-discussion group: Colcannon 2 medium russet or white potatoes, peeled 2 cups shredded green cabbage 1/2 cup chopped onion 1/4 cup soy milk 1 to 2 tbs soy cheese (optional) salt and pepper 1. cut the potatoes into one inch chunks. place the potatoes in a medium pot, and cover them with water. bring the water to a boil, and cook the potatoes until they are almost tender, about 10 minutes. 2. add the cabbage and onion; continue cooking until the potatoes and cabbage are soft, about 5 minutes. drain. 3. add the milk and mash until the potatoes are smooth. add cheese if you desire. taste; season with salt and pepper. enjoy! --Cherrie, veglist from Maida Citizens for Pets in Condos, http://www.petsincondos.org South Florida Vegetarian Events, http://www.soflavegevents.net Quote Link to comment Share on other sites More sharing options...
