Onion Rice 1 tablespoon vegetable oil 1 yellow or red onion, chopped 1 cup long-grain white rice 2 cups broth 1 teaspoon ground black pepper Heat oil in a large saucepan on medium heat, add onion; saute for a few minutes before adding rice. When onion is tender, add black pepper and broth. Bring the mixture to a boil and cover. Reduce heat to low and simmer, covered, for about 20 minutes. Uncover the pan and fluff with a fork.
