LAVENDER TEA BREAD 3/4 cup unflavored soy or rice milk 3 Tbsp finely chopped lavender 3 Tbsp Earth Balance 3Tbsp unsweetened applesauce 1 tsp powdered Stevia (or 1 cup sugar or Splenda) 3 egg whites 1 cup flour 1 cup whole wheat flour (*see note) 2 tsp baking powder 1/2 tsp salt Preheat oven to 325 and spray a 9x5 inch loaf pan. Combine the lavender and the milk in a small saucepan and heat to a simmer. Remove from heat and allow to cool slightly. In med bowl cream margarine, applesauce and sugar or sugar substitute.Beat in egg whites. Mix all dry ingredients together in one bowl. Add to creamed mixture alternating with lavender milk until just blended. Pour into prepared pan and bake 50 mins. or until tester comes out clean. Cool in pan on wire rack. ****Note: as always, I use all whole wheat and no white flour and I feel that it is just as good if not better this way.
