Guest guest Posted February 18, 2006 Report Share Posted February 18, 2006 I got this recipe from a recipe card from Wild Oats Rör Spinach Gratin 2 tablespoons unsalted butter 2 cups chopped yellow onions (2 large) 1/8 cup flour 1/4 teaspoon nutmeg, grated 1/2 cup heavy cream 1 cup whole milk 2 bags fresh spinach 1/2 cup freshly grated Parmesan cheese 1/2 tablespoon kosher salt freshly ground black pepper 1/2 cup grated Swiss/Gruyere cheese Preheat the oven to 425 degrees F. Melt the butter in a heavy-bottomed saute pan on medium heat. Aed the onions and cook for about 5 to 6 minutes or until translucent. Add the spinach to the sauce, cook for about a minute or until the spinach is just wilted. Add the flour and nutmeg, stir and cook for 2 more minutes. Add the cream and milk and cook until thickened. Add 1/2 of the parmesan cheese and mix well. Season with salt and pepper and transfer to a baking dish and sprinkle with the remaining parmesan and the gruyere cheese.
