I can't call myself a vegetarian because I do eat fish, but here in the south that doesn't seem to count as " meat " to most of the red-meat fanatics we have down here. In any case, I am looking for vegetarian recipes and cookbooks to use that will help me feed myself and my husband inexpensively and easily. Everytime I make a full-on " recipe " , I have tons of leftovers that never get consumed. I'm not working much right now so I'd like to find inexpensive recipes for two that aren't too complicated. You will find plenty of recipes in the recipe file folders that are delicious and very inexpensive, many are using the same basic ingredients but prepared in different ways.
