Yellow Split Pea Puree - Dip - Vegan

Amount Measure Ingredient -- Preparation Method

1 cup dried yellow split peas

2 cups water

1/2 chopped onion

6 cloves garlic

1 bay leaf

2 sprigs rosemary -- (optional)

Juice of 1 lemon

1 T olive oil -- (optional)

Salt to taste -- (optional)

 

Soak the peas for a day and cook in water with the rosemary and bay leaf and

garlic and onion until soft - about 15 minutes. Drain the peas and remove the

bay leaf and rosemary sprig. Puree in a food processor with the lemon juice and

oil if you're using it. Salt to taste, again if you're using it.

 

Can be used as a spread or dip.
