Vegetarian Bean Soup 16 oz. pkg Jack rabbit bean soup mix(has about 15 different beans in it) 16 oz.pkg. frozen mixed vegetables (caarots,peas,corn,green beans and lima beans) 14.5 oz can of stew tomatoes,cut up 1 large onion,cut up 2 cloves garlic,cut up 1 1/2 t. salt 1/4 t. pepper 1 t. cumin 1 celery stick cut up 1/2 cup pearl barley Soak beans over night. Cook for 1 to 1 1/2 hours until tender.Add remaining ingredients, and cook for 1 hour.Enjoy. I am single, so I just use what I need out of the bag. I see there is some black bean recipies so I will have to take a look at them. I use alot of beans theses days.I always keep them on hand.Hope you like this recipe. Let me know.
