Purple Haze 1 1/2 cups thinly sliced red cabbage 12 snow peas,quickly blanced and cut into matchsticks 1 cucumber,cut in half lengthwise and then sliced 1 red bell pepper, diced 1/2 onion chopped 1 celery stalk diced 1 small carrot, coarsely grated handful of cilantro, chopped Dressing 1 tsp. sesame oil 1 slice ginger, finely grated 1 garlic clove, pressed 1 tsp. soy sauce 1 1/2 tbls. peanut butter 1/3 cup rice vinegar 1/3 cup of a good light olive oil 1/2 tsp. sugar 1 pinch red pepper flakes salt & pepper to taste toasted sesame seeds (I use the black ones) Place salad ingredients into a salad bowl. Place all dressing ingredients (except the sesame seeds)into the blender and blend until smooth, creamy and with a slightly thin consistency. Toss the dressing with salad, sprinkle sesame seeds over top and serve. / " Purple haze all in my brain; Lately things just don't seem the same.
