Guest guest Posted February 16, 2006 Report Share Posted February 16, 2006 Chimichurri Sauce (Argentina) This is wonderful drizzled over rice, beans, or dip pieces of crusty bread into it. 2 cups loosely packed fresh flat-leaf parsley leaves 1/4 cup coarsely chopped onion 1/4 cup extra-virgin olive oil 1/4 cup red wine vinegar splash of red wine (optional) 4 cloves garlic, minced 1 teaspoon minced fresh oregano (or dash of dried) 1/4 teaspoon cayenne pepper, or to taste 1 minced hot pepper (optional) 1/8 teaspoon salt, or to taste 1/8 teaspoon freshly ground pepper, or to taste Pinch of sugar Process all the ingredients in a food processor until smooth.
