No Cheese Quesadillas 2 (16ounce) cans of pinto or black beans, drained 1/2 lb. extra firm tofu, patted dry 1 cup of your favorite salsa 3 tablespoons of fresh chopped cilantro (fresh basil will work) 1/4 teaspoon salt 1/8 teaspoon pepper 10 large flour tortillas (no lard ones) 1/3 cup chopped onion 1 hot pepper, minced 1 or 2 garlic cloves, minced dash of cumin tablespoon oil Cube the tofu and mix with beans, cilantro and salsa in a large bowl. Heat oil and saute onion, garlic and hot pepper for 2 minutes. Add salt and pepper and dash of cumin, now add to the tofu mixture and stir. Let mixture sit for 20 minutes so the tofu absorbs the flavors. Spray a large skillet with cooking spray and heat the skillet until hot, Spray one side of the tortilla with spray and place the sprayed side down in hot pan. Cover half of the tortilla with tofu bean mixture, after about one minute of cooking fold the plain side of the tortilla over the filled side (in half) . Check for a crispy brown color on the side cokking in pan. Take a spatula and flip the folded tortilla over and cook up the other side.
