Jane BAKED ASPARAGUS WITH BALSAMIC BUTTER SAUCE Prep 10 mins Cook time 12 mins Serves 4 1 bunch fresh asparagus, trimmed cooking spray (I used olive oil) salt and pepper to taste 2 T. butter 1 T. soy sauce (I used Braggs) 1 tsp. balsamic vinegar ( I thought it needed more so i reduced 1/4 c. of balsamic vinegar and probably got a Tablespoon or two.) 1. Preheat oven 400 degrees F (200 C.) 2. The recipe didn't call for reducing the balsamic vinegar but it is soooooo yummy done that way! Just simmer approx. 1/4 cup of vinegar over med heat until it is slightly thicker then when you poured it.(maybe 7-10 mins) It slightly carmelizes it and you want to lick it out of the pan! 3. Arrange the asparagus on a baking sheet. (I cover my pan with parchment paper first, I don't like to bake the oil into my metal pans, it's hard to clean.) Coat with cooking spray or olive oil and season with salt and pepper. 4. Bake asparagus 12 mins or until tender. Don't overcook, remember they cook a little more after they come out. Drizzle the reduced (or not reduced) balsamic vinegar over the asparagus for the last two mins of cooking time. 5.Melt the butter , remove from heat and stir in soy sauce or Braggs .
